I could probably drink this straight, it’s so good! With some sweetness, some acid, and even some umami-salty notes in this vinegar, I use it to make a delicious warm mustard vinaigrette for my salmon, spinach, and bacon salads, and I’m really looking forward to tomato season when I can make gazpacho again. Simply the best vinegar ever.
